Mama Duck
I'm not a big rice eater, partly because I hate cooking it on the stove. Silly  me  finally thought to look for a microwave recipe. This is now the only way I cook rice and it comes out perfect for me everytime.

White Rice

Ingredients

  • 1 cup white rice (not minute rice)
  • 2 cups hot water
  • 1 teaspoon butter or margarine
  • 1/8 teaspoon salt

Directions

  1. Using a 2 quart casserole dish with lid, put rice, hot water, butter and salt in dish. Stir. (I put my casserole dish on a plate in the micro as sometimes the water boils over a little. Saves cleanup after).
  2. Cover, and microwave on high power 5 minutes. Stir with fork (careful watch the steam!)
  3. Cover and put back in microwave and cook on medium this time for 15 minutes.
  4. Remove lid (careful again!) and fluff with fork.
  5. Let stand 2-3 minutes.
  6. Serve.

Brown Rice

Ingredients
4 cups water
1 cup brown rice
1 teaspoon oil (I use olive oil)

  1. Using a 2 quart casserole dish with lid, put rice, hot water, butter and salt in dish. Stir. (I put my casserole dish on a plate in the micro as sometimes the water boils over a little. Saves cleanup after).
  2. Cover, and microwave on high power 35 minutes. Stir with fork (careful watch the steam!)
  3. Let stand 5 minutes.
  4. Serve.
